Candied Sweet Potatoes

Super easy recipe from The Joy of Cooking.

All measurements are pretty loosey-goosey.

Ingredients

  • Some sweet potatoes
  • Salt
  • ⅓C maple syrup -or- ¾C brown sugar (but it tastes better with maple syrup)
  • 2T butter
  • Marshmallows (optional).

Directions

  1. Pre-heat oven to 375°.
  2. Peel sweet potatoes and cut into chunks.
  3. Place them into salted water and boil until just done. Do not over-cook into mushiness.
  4. Drain and place into baking dish.
  5. Add maple syrup and stir to coat.
  6. Dot with butter chunks.
  7. Cover with marshmallows and bake uncovered for about 20 minutes or until marshmallows are browned.
