Super easy recipe from The Joy of Cooking.
All measurements are pretty loosey-goosey.
Ingredients
- Some sweet potatoes
- Salt
- ⅓C maple syrup -or- ¾C brown sugar (but it tastes better with maple syrup)
- 2T butter
- Marshmallows (optional).
Directions
- Pre-heat oven to 375°.
- Peel sweet potatoes and cut into chunks.
- Place them into salted water and boil until just done. Do not over-cook into mushiness.
- Drain and place into baking dish.
- Add maple syrup and stir to coat.
- Dot with butter chunks.
- Cover with marshmallows and bake uncovered for about 20 minutes or until marshmallows are browned.
